Rava Laddu is a quick fix Sweet which can easily be prepared. Rava Laddu/Semolina Ladoo is a tasty Indian Sweet prepared with roasted Semolina/White Rava. The rich flavour of Roasted White Rava/Semolina, Cashew nuts, Raisins along with a wonderful aroma imparted from powdered Cardamoms makes this humble Sweet a delicacy of its own.
Though we need to take few careful steps while preparing Rava Laddu like roasting White Rava/Semolina to perfection and once the ingredients are combined well, it should be allowed to cool for a brief period before shaping it out into small balls - Laddus. But this method of preparing Rava Laddu is quite easy and foolproof if you follow the instructions.
This Diwali I have tried to post a few Sweet & Savouries recipes which can be easily prepared. Less time-consuming, easy & with very few ingredients which would suit for last minute preparations. Some recipes with ready-made powders too. If you are in a mood to prepare your own Sweets & Savouries I feel these recipes may turn out to be useful. If you are in short of time and also in need to prepare home-made Sweets for this Diwali Rava Laddu is one such Indian Sweet Recipe which comes handy.

HOW TO MAKE RAVA LADDU

INGREDIENTS:
White Rava/Semolina - 1 CupSugar - 1/2 - 3/4 Cup
Ghee - 3 Tablespoons
Milk - 3 Tablespoons
Cashew nuts - 20-25 Pieces
Raisins - 20-25 Pieces
Cardamom - 3-4 Pods
METHOD:
- Powder the Sugar along with the Cardamoms and keep it aside.
- Heat 1 Tablespoon of Ghee in a Pan and roast the Cashew nuts until they turn into golden brown in colour.
- Remove and keep it aside.
- In the Remaining Ghee roast the Raisins on a very low flame until they fluff-up.
- Remove and keep it aside.
- Add another 2 Tablespoons of Ghee and roast the White Rava/Semolina on a very low flame for about 5-7 minutes until it turns fragrant.
- Switch off the flame.
- Now add the powdered Sugar to the roasted Semolina and mix well until it is well incorporated.
- Transfer the ingredients to a wide bowl/plate.
- Add in the Roasted Cashew nuts and Raisins to the Sugar-Semolina mixture.
- Spread it out and allow it to cool down slightly.
- Now drizzle a tablespoon of Warm Milk, to one side of the Rava Laddu Mix.
- Take small portions of Semolina mixture and shape them into Laddus.
- Then pour in another tablespoon of Warm Milk and shape them into Laddus.
- Pour little Milk at a time and shape the Semolina Mixture into Laddus.
- I used about 21/2 to 23/4 Tablespoons of Milk for the whole batch.
- Let the shaped Rava Laddus rest for a while before storing them in an airtight container.
NOTES :
- I used just 1/2 Cup of Sugar in this Rava Laddu recipe, as my previous version with 3/4 Cups turned out to be very sweet for our preference.
- Adjust the sweetness to your preference.
- Grinding the Cardamom Powder along with Sugar will help you get a fine powder.
- Alternatively can Pulse the roasted Semolina/White Rava(In a Mixer-grinder) along with Sugar.
- This helps to incorporate the ingredients evenly.
- Let the ghee be at room temperature /slightly melted.
- Pour in the warm milk, little at a time and shape the Semolina mixture into Rava Laddus immediately.
- Add more warm milk if you find the mixture crumbly or difficult shaping it into Laddus.
- I used about 21/2 to 23/4 Tablespoons of Milk for the whole batch.
