Ingredients:

2 1/2 tablespoons Coriander Seeds
2 tablespoons Peppercorns
10-12 Green Cardamom Pods
10–12 Cloves
2 pieces of Cinnamon (1" piece each)
A few strands of Mace
2 inches Dried Ginger
1 tablespoon Turmeric Powder
1/4 Nutmeg, grated

 

Method:

  • In a dry frying-pan over medium heat, toast the coriander seeds, peppercorns, cardamom pods, cloves, cinnamon, and mace. Stir frequently for 2–3 minutes until aromatic but not burned.
  • Remove from heat and let cool. Then add the dried ginger, turmeric powder, and grated nutmeg.
  • Grind the mixture to a fine powder using a spice grinder or a mortar and pestle.
  • Allow the freshly ground spice to cool before transferring it to an airtight jar for storage.
