    Today is the 7th Anniversary or can I say Blogiversary😉 of my Blog - Essence of Life - Food. Well, 7 Years of Blogging, 800+ tried & tested recipes, 1 Million + Viewers until date and loads & loads of learning. That is what my life with Essence of Life - Food has bought along. I was able to nourish, create, bring up and make a long-lasting note of Wonderful memories, memories of food, recipes and food photographs. 

    When I say, learning, that's learning about food, its origin, history and cooking, my pre-conceptions about food, cuisine, ingredients, measurements, precision, tasting and patience for making food and towards food has taken an extravagant leap in every term.  Still, I feel sceptical towards certain food and I have certain inhibitions towards it.  But I think since starting this food blog, in this 7 years of time, I have started to taste a certain food which I never would have attempted before.  So I strongly feel that time can bring changes, and I am trying to be open to it in all sense, especially when it comes to learning.  After all, Life is a Learning Process.

    I recently have started to feel that people I know relate me to food and never forget to appreciate my work. People appreciate my food photographs at the first look from Instagram and Pinterest, some even find time to try my recipes and also let me know how it turns out.  As always, I feel humbled and overwhelmed all at the same time when they say they liked it.

    I wish to thank all who would have visited my blog, reading my posts, my blog & my recipes. All these years, though with not much of overwhelming growth (commercially), I have tried to keep up my own pace in blogging, which has become my passion, a hobby, and it is where I spend my quality time. Thank You all for the support & I hope my style of recreated recipes suit your tastes and help you cook wonderful meals. Thanks for all the support and encouragement.

    Well, to commemorate the occasion, this was a long pending post which I had been planning to post for Christmas/Easter.  A typical Christian household Breakfast for any occasion may be it's a festival, family function, wedding, engagements, christening, communions etc., we come up with a typical spread unique to a Kerala Christian household which usually consists of Appams, Idiyappams, Vattayappams, Bread, Cutlets and a combination of Classic Stews, Egg Roasts, Chicken/Mutton/Beef Curries.  And for people with a sweet tooth, I have added a few simple sides like Sweetened Coconut Milk & Nendhra Pazham cooked in Jaggery Syrup which would go hand in hand with Appam, Vattayappam and Idiyappam.

  Let me bring you a set of menu choice typically served as a Breakfast Menu in a Kerala Christian household.  Here I have tried to bring out a collection of those recipes put together for a quick Menu Planning. And most of the Kerala Christian households prepare a combination of these dishes for Breakfast.

    Begin your festive day with a fabulous selection of Recipes in a typical Kerala style, including Appams, Idiyappams, Bread and a combination of Classic Stews, Egg Roasts, Chicken/Mutton/Beef Curries.  And for people with a sweet tooth, I have added a few simple sides like Sweetened Coconut Milk & Nendhra Pazham cooked in Jaggery Syrup.

    Once the festival/function fervour begins, the thought of what to cook the Eve, Breakfast and Lunch followed by the Evening Snack and Dinner follows the suit.  And this is the time most of the families meet around. As we can term it, the Christmas feast is elaborate - tables laden with platters of all kinds of meat, breads, stews, rice, fish, snacks, dessert and the must-have Fruit Cake alias Plum Cake and overflowing glasses of homemade wine & let me remind you that it's just not the wine that culminates the Festival fervour.

APPAMS/VELLAYAPPAM/PAALAPPAM

      "Appam" is indigenous to Kerala, an integral part of Kerala Cuisine. A signature dish popularized by Kerala Syrian Christians. A popular breakfast dish and a default dish in a Breakfast Menu on a Christmas/New Year/ Easter Day.  Not only that it is served as a breakfast dish, but it also takes a special place in most of the Festive Menu List.  A day of importance/special occasion in a Christian household, surely calls for Appam. Most of the occasion in our family, we serve a course of meal which comprises Appam, Stew and Cutlet.

    Vattayappam - a soft, spongy fermented Rice cake, steam cooked, which is similar to its counterpart Vellayappam in terms of the ingredients, but the texture and cooking method is what makes Vattayappam special. 
    It is a traditional Kerala snack, a Nadan Palaharam which turns out to be an oil free tea time snack in most of the Kerala households.  It also serves best to be served as a Tea time snack on festive days. And it is also a Breakfast dish, which can be eaten like an Appam with hot & spicy Vegetarian or Non-vegetarian Curries. Vattayappam simply sneaks into the Christmas Breakfast Menu along with Appams & Idiyappams, as it is one dish which is easy to cook.

    Yet another South Indian delicacy prepared with Rice FlourIdiyappam a.k.a String Hoppers is one popular Breakfast dish in Kerala Cuisine.  It takes a special place in the Festive Breakfast Menu in a Christian household.  Simply serve it with Stew or mild curries like Kurma, Mappas etc.,


BREAD

    Whatsoever, even with all the above dishes, Bread takes a special place in the Breakfast Menu.  Bread simply sneaks into the scenario to add up to the number of dishes, and also best serves as a quick fix.  And if you need a variation to all Rice based dishes, then Bread is one best option to add in to the list. Bread & Stew is one popular combination and needless to say, Chicken/Beef Curries too goes hand-in-hand with Bread.

    Well, when it is up with the main course dishes, let's look into what could best suit with the above dishes.  Popular combinations being Kerala Style Stew prepared with any kind of Meat and Vegetables and laced with copious amount of Coconut Milk serves best for all the above dishes.

    A day of importance/special occasion in a Christian household, surely calls for starter, even for breakfast. Most of the occasion in our family, we serve a course of meal which comprises Appam, Stew and Cutlet.

NON-VEGETARIAN & VEGETARIAN SIDE DISHES

    For variations, add Classic Kerala Egg Roast or spicy Chicken Curries.  Well, if you are thinking about a still elaborate Breakfast Menu, then add Beef/Mutton Curries/Roasts, Beef/Pork Vindaloos, Fish Moilees, Duck Mappas etc., for an extravagant Breakfast Spread. And if you happen to be a vegetarian, anyway it is a Taboo inside the family to be a vegetarian when you have such a hearty spread. But, if at all... then, we even have a wonderful combination of mild Vegetable Curries, Stews or Kurmas or simply some Coconut Chutney to pair up with Appams and Idiyappams.

    If you are wondering about how elaborate a breakfast menu can go, absolutely it's extravagant and has everything in terms of "Nirpathuve, Nadappathuve, Parappathuve" ( everything which stands, walk and flies).

    Finish off the Meal with your choice of Beverage like Coffee/Tea.  Kerala Style Kattan Chaya is one best after drink to wash off this heavy Breakfast.  At least the Caffeines or Tannins in the drink can help you keep awake from the Comatose.
