    Have been a bit occupied with a few personal works, that I had to literally take a break from blogging.  Which was constantly nagging my mind.  Travelling to a part of the world, halfway through the globe for an important task with my daughter, had taken my whole time planning for the trip.  Last few days we were in the most beautiful southern part of Italy, loaded with history and cultural insignia.  Mountains and Beaches, history and architecture, food and drinks all in its own style. Indulging into the cornucopia, yet ranting about not getting Rice and Curry in the sweltering Sicilian Sun.  But the awe and wonder, a new place holds is always a lifelong experience and opening of mind into a whole new culture.

    The love for travel holds the excitement, but food takes the limelight in all sense. A whole new experience of Colazione, a typical breakfast in Italy which is a sweet meal with Croissants alias Cornettos, Brioche or Buns slathered with Jams or Gelattos or eaten with Granitas,  And a few more sweet treats unique to Sicily - Cannoli, Sicilian Almond Cookies, known as "pasticcini di mandorla". Cassata Siciliana, Frutta di Martorana etc., & etc., A lot of Gelattos served with Brioche was the high end of sweetness for a Breakfast in our terms. The whole Breakfast affair ended up in a Sweet Note & it was sure on a higher side. But the best part was the perfect cup of coffee - cappuccino, or a café latte.  But the locals go with a tiny cup of Café, a strong small shot of Coffee brew(Decoction in our terms).  Then there comes the lunch & dinner with Pastas, Pizzas, Focaccias &  Aranchinis. And finishing off the meal with popular Italian Dessert Tiramisu.  Loved the food and indulged in it to the core.

    But the moment we hit our home pitch, we start craving for our own food. Coming back from the sweltering summer of Italy, I just wanted a simple serving of Thayir Sadham(Curd Rice) and Pickle.  More than enough, that I was satiated to the core.  Settling down after the travel and all about getting rid of the jet lag, the very next thing was to write a post after a heart-warming meal of my favourite Bread Toast a with Sunny side up eggs, which was to satiate my mind and tummy at the same time.

    Here I come with my all-time favourite Breakfast Combo - Toasted Bread with Sunny Side up Eggs.  Jump start your day with a hearty breakfast of eggs on toast.  This combo has been an anytime meal and would love to wait for a chance to eat it. And it happened to be one immediate meal at home after my trip this time.  The moment I saw a loaf of bread, the next moment I was so damn sure to make was this heart-warming combo of Toasted Bread and Eggs cooked Sunny side up.   Knowing my love for the combo, my husband had bought a loaf of bread, thinking that I may want to eat Bread and Sunny Side up.

    Well, when it comes to Toasting the Bread, we all have our own way to get it done to suit our whims and fancies.  A simple toast using an electric bread toaster or in a bread toaster oven.  But from time immemorial at home, I have seen my mom toasting it over our very old chapati griddle.  Can toast it without any butter too, just browning it up.

TOASTING THE BREAD:

    Toast is almost an age-old method, and it dates back as old as it is. It is believed to have been found by the Egyptians to put some spark back in stale bread. In my opinion, Bread Toast is one of the most versatile, delicious, and fits well for a breakfast or as a side at any meal. We can opt to make a toast from any kind of bread, and we can also opt to make it in the toaster, in the oven, over a fire, in a pan etc., & etc., We can top it up with a variety of topping to suit your taste.

    White, wheat, or rye or multi-grain breads suits well for a toast.  My personal preference is the traditional soft sandwich bread, which makes an excellent toast. It's always pre-sliced and results in a uniform toast that's perfect for making crunchy sandwiches or as a side to breakfast dishes.  

*If you have a few stale breads, don't throw it out. Toast it up! Toasting old bread revitalises it, and that’s why I think people invented a technique called "TOASTING THE BREAD."

2 Main factors to consider while toasting are - TIME & HEAT

  • The longer you cook the toast, the browner it becomes.  
  • So adjust the heat & time to suit the preferred level of browning.

    Here I am going to give an age-old family method we have always followed while toasting a bread and that is using a pan.  It's one of the best methods which yield you with the most even toasting. Just put your bread into the pan dry and let the heat toast the bread with a smear of Butter.  It works well with no butter or oil to grease it too. Personally, I love to make it with butter, and sometimes I go a step ahead with a desi touch, adding some Ghee to my Toast.   

*TRIVIA -Frying the Toast with a little butter or oil is sometimes called "Texas Toast," It turns out crisp and gives a golden crust and all the more it's delicious.

INGREDIENTS:

Bread(Brown/White) - 2 Slices
Butter - 1 Tablespoon

 

METHOD:

  • Heat a pan on a medium heat, once the pan is heated, reduce the flame to low-medium.
  • Smear some butter on each side of the Bread slice using a butter knife or using a flat spoon.
  • Place a slice of Bread or two on the pan.
  • Toast this over a very low heat throughout, to avoid too much browning or charring.
  • Flip the slices and toast it for a few more minutes.
  • Once the Slices have browned to your preference, take the slices from the pan.
  • Follow the suit with the rest of the bread slices.

    Now, let's talk about the Showstopper - Sunny-Side Up Eggs.  While cooking Sunny-Side up eggs, heat control is one crucial part,

HEAT
  • Too much heat - the whites will toughen and brown at the edges.
  • Too low - the yolks will cook partway through by the time the whites are set. 
  • So properly heat the pan. 

OIL - A little bit of Oil is a must.  The hot oil helps to set the whites without covering the pan and clouding the yolks. 

SEASONING - Season after the eggs are done.  Seasoning, a Sunny-Side Up Egg is always with Salt & Pepper.  I usually just sprinkle a dash of Salt.

INGREDIENTS:

Egg - 1 No.
Oil - 1 Teaspoon
Salt - To Taste
Pepper - 1/4 Teaspoon

 

METHOD:

  • Heat oil in a Pan.  Let the flame be at medium-low. 
  • Gently crack the egg into the pan. 
  • Cook for about 3 minutes, or until the whites are mostly set, with some still-runny whites near the yolks.
  • Sprinkle with pepper and salt. 
  • Remove Egg from pan and serve it hot.

NOTES:

  • When you crack the egg into the pan, you shouldn't hear a hiss.
  • The eggs should lie flat and still. 
  • If you hear sizzling or the whites flutter or bubble, then reduce the heat.
  • Too much heat will toughen the whites.
