      I had a hard feeling that old times have gone when Women folks meticulously planned and prepared Diwali Sweets & Savouries.  In recent times the working-women class, would they find time to tediously prepare homemade Sweets & Savouries for a festival?  But all are proving my notion wrong. Recently Social media is proving the other way round with most of the women finding their precious time to prepare homemade goodies for Diwali. Again hats off to the multitasking ability of a woman.
     When it comes to goodies like Murukkus, if you can get hold of a ready-made Murukku Flour, then the job gets easier.  Even Savouries/Namkeens like Sev, Mixture or Chivdas can be prepared with simple ingredients.  Even, Roasted and Deep-fried Nuts comes in handy as last-minute additions to the Bakshaman list.
      But when it comes to a celebration, it is incomplete without the touch of a Dessert or a Sweet - the so-called 'MITTAI'.  Dessert takes the centre arena when it comes to festivals like Diwali. Sweets add the much-needed enthusiasm to lift up your festive spirit. For this Diwali, I have added a few easy to make Sweets & Savouries in last few days which can be easily prepared, less time consuming and few are quite handy for last-minute preparations. This collection of Recipes is an absolutely easy way to add colour and variety into your dessert palate.
     Light up & brighten up your homes with simple yet delectable Desserts for this Diwali. I have tried to add some recipes which can be prepared in advance and then combine it up together in a jiff.  Simple ingredients, a little bit of planning and a couple of minutes is what you need to soothe your taste buds, succumb your craving for a Sweet Tooth and all the more readily treat your Guests with delectable delights.  
       This Post totally revolves around Rabri/Rabdi - a classic Indian Sweet commonly known to be as a Bengali Dessert has its roots from Varanasi(Benaras).  When it comes to milk-based sweets Indian Cuisine has its own part of decadence.  A dessert which is rich, creamy and heavy on the stomach, but an exceptional excuse can always pop out to indulge in such desserts.
     Rabri/Rabdi is slightly time-consuming recipe when it comes to preparation. The authentic recipe call for reducing and thickening the milk on a low flame, then it is sweetened with Sugar, flavoured with Cardamom, Kewra Essence & Saffron Strands and elaborately garnished with slivered Nuts and Rose Petals.  Slow cooking on a low flame gives a rich & creamy texture with an off-white hue to the Rabri/Rabdi with an additional note of aroma from the flavourings added and from the reduced milk. 
     But you can always use ingredients like Condensed Milk/Milk Powder to make the process easier.  When you are in short of time and also want authentic dessert for a celebration, there is nothing wrong going slight way far apart from the traditional methods.  Prepare Rabri/Rabdi, cool and store it in a refrigerator.  Stays good for about 3-4 days when stored in the refrigerator.  Can freeze it for up to 2 months. 
     Rabri/Rabdi is usually served warm/chilled as such. It can be served as a standalone dessert or can be paired with other sweets. Rabri, when combined with various Sweets, converts itself into delicious & delectable new versions of Desserts. Rabri comes out to be versatile when it comes to combining it up with various other Sweets.  Try your hand with your choice of combination and brighten up the festive mood.  Rabri/Rabdi is one of the best way to end a scrumptious meal.   

Rabri/Rabdi can be converted into

  • Shahi Tukda - Simple, yet a royal treat can be prepared by just soaking a few slices of deep-fried Bread Slices in Rich & Creamy Rabri/Rabdi.
  • Ras Malai Serve soft & spongy Rasagullas soaked in Rabri/Rabdi for a wonderful and traditional Dessert.
  • Rabri can also be served with Puri.
  • Combine Rabri/Rabdi with Kulfi or simply add a few flavourings and garnishes and convert it into fancy Faloodas.
  • Can also serve Rabri/Rabdi with Jalebi, Paneer Jalebi.
  • Yet another traditional dessert called Malpua, an Indian style Pancake can be combined along with Rabri.

     Rabri/Rabdi is a classic Indian Sweet commonly known to be as a Bengali Dessert, has its roots from Varanasi(Benaras). Rabri/ Rabdi is one of the most delectable Indian Desserts. It is a tasty & creamy traditional Indian Dessert basically prepared with Milk - reduced, sweetened and flavoured.  Traditionally, milk is slow-cooked in a Kadai or a flat pan, until layers of Malai forms which is collected and added into the Rabdi which forms layers of Malai/Cream in it giving it a name "Lachedhar Rabri". Rabri/Rabdi is usually served warm/chilled as such. It can be served as a standalone dessert or can be paired with other sweets. 
      It goes well when served along with Gulab Jamun, with Shahi Tukda, Malpua, Jalebi, Puri or convert it into a fancy Falooda. Serve Rasagullas with Rabri/Rabdi for a wonderful Ras Malai. Rabri/Rabdi is one of the best way to end a scrumptious meal.

SHAHI TUKDA - DOUBLE KA MEETA


     If "Shahi Tukda" is considered as a Royal Piece of Dessert from Awadhi Cuisine, then "Double ka Meeta" is a Piece of Aristocracy from Hyderabadi Cuisine. A dish which is known to have been popularized during the Mughlai Era. It is as simple as deep-frying the Bread Slices in Ghee into a golden yellow colour and then dunging the pieces into a creamy rich Rabri - a concoction made by reducing and thickening the milk with flavourings, sweeteners and garnishes. Fried Bread Slices are allowed to chill for a few hours before serving so that the flavour of Rabri/Rabdi gets well infused with the Bread Slices.  This yields a perfect texture, converting the Sweet dish into a melt in mouth delicacy.

     Ras Malai / Rosso Malai is a rich & creamy dessert made with Paneer/Chenna and flavoured milk. Ras Malai means Creamy(Malai) Juice(Ras) in Hindi. Traditionally Rasgullas - soft, spongy dumplings are made out of Paneer/Chenna(Ricotta/Cottage Cheese).  Rasgullas are quite spongy and have a melt in your mouth texture.  These spongy Rasgullas are finally soaked in Rabri/Rabdi, a thickened and reduced milk with flavourings and heavily garnished with slivered Cashew nuts, Almonds, Pistachios, Saffron strands & Rose Petals.
