HOW TO COOK SUNDAL PODI - SPICE POWDER FOR SUNDAL

INGREDIENTS :
Bengal Gram Dhal/Chana Dhal - 2 Tbspn
Black Gram Dhal/Urad Dhal - 2 Tbspn
Dry Red Chillies - 4-5 Nos.
Coriander Seeds - 1/4 Cup
Turmeric Powder - 1/4 Tspn
Salt - To Taste
METHOD :
- Dry roast the Dry Red Chillies on a low flame until it pops and fluffs up and become hot.
- Add Coriander Seeds to the above and roast until the raw flavour goes and it turns totally hot and fragrant.
- Add Bengal Gram Dhal/Chana Dhal & Black Gram Dhal/Urad Dhal and roast until the Dhals changes into golden brown in colour.
- Switch off the flame and add Turmeric Powder into it and mix well.
- Allow it to cool.
- Add Salt & Grind the roasted ingredients to a fine powder using a mixer or a coffee grinder.
- Allow the Sundal Podi/Spice Powder for Sundal to cool off completely before storing them.
NOTES :
- Can dry the ingredients in sun before preparing Sundal Podi.
- Care should be taken not to burn the ingredients. It would totally spoil the taste of the Sundal Podi.
- Roast all the ingredients on a low flame.
- Freshly roasted ingredients yield flavourful Sundals. So usually make a small batch.
- Store the Sundal Podi in an air-tight container in a dry place.
- Do not use a wet spoon or wet hand while using the powder.
- Add Cumin seeds and Peppercorns and give a quick stir.
- Adding salt to the Sundal Podi is purely optional.
- Adjust the number of Red Chillies to suit your spice level.
- Can also add Cumin seeds and Peppercorns.
- If using the above spices, dry roast it along with the above-given ingredients.
