PANAGAM RECIPE

     Festive Season has begun in India, 10 long days of Navratri followed by Diwali in few weeks. Starting with Panagam, I have planned to post a few recipes which can be easily prepared and served for Navratri in the midst of busy days. Womenfolks get busy on these days with a lot of chores related to Golu and Navratri Celebrations. I am updating few Sundal recipes along with Sundal Podi and quick fix sweets which can be served as a Naivedyam/Prasadham. Starting the festive recipes with Panagam, an all-time refreshing drink,
     'Panaga' in Sanskrit means a 'Sweet Drink'.  Colloquially called as Panagam/Panakam is a traditional South Indian summer drink prepared with Jaggery & Lime Juice flavoured with Dry Ginger, Cardamom, served with a hint of edible Camphor or Tulsi Leaves.  Panagam is usually served in Temples during Rama Navami, Radha Kalayanam and Narasimha Jayanthi. As this drink is strongly associated with Rama Navami and Narasimha Jayanthi, it is served in quite a few homes in Tamil Nadu, Andhra Pradesh and Karnataka during these days. Most of these festivals fall during Summer.  Panagam is offered to Lord Rama on his birthday, which is celebrated as Ram Navami throughout India.  As his birthday falls during Summer, his offerings are usually Panagam, Neer Mor (spiced buttermilk), Kosambari, a typical South Indian Salad which are all suitable for summer.  The traditional idea of serving Naivedhyam/Prasadham has considerable relativity to the prevailing season and the health benefits it can impart.
     Panagam is a natural coolant, and it helps to get our body hydrated. This drink is absolutely not limited to be prepared as a Prasadham.  It is a totally refreshing drink which can be easily made to quench your thirst on a hot day. Jaggery, the main ingredient in Panagam is known as the medicinal sweetener and has healing properties. Jaggery was and is used as a sweetener in India since ancient times. In South India, Panagam was used as an Oral Rehydration Solution (ORS) especially when the humidity and excessive sweating saps the body fluids and salts. Jaggery in its purest form is loaded with electrolytes and raw carbohydrates. It is considered as a perfect antidote for dehydration. For all these reasons, Jaggery is regarded highly in Ayurveda. Almost all the ingredients in Panagam has health benefits, which makes this a totally wonderful and refreshing drink suitable for all seasons.

HOW TO MAKE PANAGAM - TRADITIONAL SOUTH INDIAN REFRESHING DRINK

INGREDIENTS :

Water - 5-6 Cups
Jaggery - 1 Cup
Dry Ginger Powder - 11/2 Teaspoons
Cardamom - 5-6 Pods
Fresh Lemon/Lime Juice - 1/4 Cup 
Tulsi Leaves - few

 

METHOD :

  • Powder 2-3 Pods of Cardamom along with Dry Ginger and keep it aside.
  • Melt Jaggery in 1 Cup of water and stain for any impurities.
  • Pour in the remaining Water to the dissolved (Melted) Jaggery along with Dry Ginger Powder and Cardamom Powder.
  • Boil the Panagam Mixture for a few minutes.
  • Switch off the flame and let it sit for a few minutes.
  • Filter the Panagam using a strainer.
  • Add Lemon Juice to the Panagam and mix well.
  • Slightly open the remaining Cardamom Pods and add it into the Panagam.
  • Serve it along with few Tulsi Leaves (Holy Basil).
  • Serve Panagam chilled or at room temperature.

NOTES :

  • Adjust the amount of Jaggery to suit your sweet preference.
  • Jaggery can be substituted with Palm Sugar, but Refined Sugar would surely not serve the purpose.
  • There are no strict measurements when it comes to Panagam Recipe.
  • When it comes to ingredients for Panagam, Jaggery, Dry Ginger, Cardamom and Lemon Juice are the main ingredients.
  • Other ingredients like Edible Camphor, Tulsi Leaves (Holy Basil), Pepper, Nutmeg, etc., can also be added to enhance the taste and flavour of the drink.
  • Adjust the amount of Lemon Juice to suit your preference.
  • This is a mildly sweet and refreshing drink.
  • Can substitute Lemon Juice with Tamarind.
  • The colour of the drink totally depends on the colour of the Jaggery.
