     Tis the Season and it comes along with beauty, colour, emotion, taste and flavour.  When I think about Christmas, the season reminds me of winter - cold and white.  But I have never lived in a place where it snows.  Earlier, the arrival of misty cold winter in my hometown is a feel to cherish and it is what I miss the most of Coimbatore.  Recently living in a Tropical Climate hot and rainy throughout the year, even the feel of Christmas comes along with rain, it rains a lot in Malaysia during December.
      The Season is brightly coloured in hues of red and green, decorations brightening up the dark nights, filled with  Flavours of Wine and Fruits, the aroma wafting from freshly baked goodies, and the melodious chorus from the Carols fill the air proclaiming the arrival of Christmas. A festive mood readily clings into my mind with the arrival of December.  But this year I feel a little aloof with both my Kids traveling and being not at home for the Season.
     When the countdown for the day starts my daily regime gets packed up with seasonal duties. Starting from Soaking Dry Fruits for the Cake, Cleaning the house, setting up the Christmas Tree & Nativity Scene, followed by baking the Fruit Cake for Christmas.  Then fixing and cooking up a menu for Christmas Party etc., & etc.,  This year the mood is quite blue, though I did most of the things -  was like a lazy bone delaying every single fix.
     When it comes to Christmas & Christmas Fruit Cake I am always reminded of the articles they flash in local dailies with local bakers soaking dry fruits for Christmas Cake.  Large quantities of dry fruits soaked in liquor for the season.  Then it has never occurred to me that I would be doing the same for my homemade Christmas Cake.  As a Daughter-in-Law, I have taken up the family tradition of making Christmas Cake from my MIL.
      Traditional Christmas Cakes have a lot of pre-soaked fruits in alcohols like Rum, Vodka, Brandy, Wine etc.,  Rich Fruit Cakes can be prepared in a Boozy, Non-Boozy, Citrusy or even can be flavoured with Tea.  So many versions & varieties to suit the glitter and glamour of the so-called Festive Season. I soak the Dry Fruits for the Christmas Cake with my homemade Wines at least a month before. Initially, I started soaking the dry fruits in fresh Orange Juice, then gradually tried my hand with Wines.  But yet to try with Rum/Brandy/Vodka.
      If you are in short of time, no worries soak the dry fruit just a day before preparing the Christmas Fruit Cake.  As such there are no strict rules in what type of dry fruits/nuts/spices we use, the soaker, soaking duration and method of preparation.  It all goes with your whims and fancies. Above all convert it to suit your preference and adjust along with your time constraint.  What we need is a good Christmas Fruit Cake which tastes and feels good for the Season.
     This is the method I follow while soaking the dry fruits for my Christmas Cake. Use any preferred Dry Fruits & Nuts of your Choice in the Cake.  Also, try your hand with your preferred Soaker - Alcoholic/Non-alcoholic.  And above all, follow your instincts when it comes to cooking in your style.

Recipe Type - How to...

Yields - 31/2 Cups - 4 Cups

Soaking Time for Fruits - 24 Hours to 1 Month.


INGREDIENTS :

DRY FRUITS :

Dark Raisins - 1/4 Cup
Golden Raisins - 1/4 Cup
Dates - 1/4 Cup
Prunes - 1/4 Cup
Dried Cranberries - 1/2 Cup
Glazed Cherries - 1/4 Cup
Candied Orange Peel - 1/4 Cup
Tutty Frutty - 1/2 Cup(Red, Green etc.,)

*Can also use Dry fruits like Figs, Peaches, Apricots, Pineapple, Currants and even Candied Ginger can be used in the Fruit Cake.
 *Add a handful of Orange/Lemon Zest to the dry fruit mix. The wonderful citrusy note it leaves in the cake would be unmistakably refreshing.

NOTE :

  • Make sure you use cleaned and dried dry fruits.
  • Wash them thoroughly and dry them before soaking.
  • Chop the bigger Dry fruits into small equal-sized pieces.
  • If the Raisins are big, cut it into two pieces before soaking.

NUTS :

Cashewnuts - 1/2 Cup
Walnuts - 1/2 Cup
Almonds - 1/4 Cup
Hazelnut -1/4 Cup

    NOTES:

    • Nuts lose their crunch once soaked.
    • Initially, I used to soak the chopped Nuts along with dry fruits.
    • But I feel it retains the texture only when added finally to the batter.
    • I dust the chopped nuts with the Flour used for baking the cake.
    • You can either soak the Nuts along with the dry fruits or roast and use them in the cake batter while baking.
    • When using Almonds, Blanch the Almonds in hot water, peel, chop and soak it along with dry fruits
    • If you're not soaking the Nuts, then roast the chopped almonds and add it directly into the batter.

    SPICES :

    Nutmeg - 1/4 Tspn
    Cinnamon - 1/4 Tspn

    NOTES :

    • Powder the Spices and add it while soaking the fruits.
    • Add the Spices while soaking the dry fruits if you are soaking for a  brief period of time in alcohol/in Orange Juice/in tea. 
    • While soaking for the dry fruits for a long time, it would not be a good idea to add the spices, as they tend to lose the flavour.
    • If so add the Spices to the Cake Batter.
    • I usually add the Spice Powder into the Cake Batter while baking.

    SOAKING IN ALCOHOL:

    Wine/Rum/ Vodka/ Brandy - 11/2 Cups to 2 Cups
       *A good quality liquor would be the best choice.

    METHOD :

    • Use dry, cleaned and sterilised airtight storage bottles for soaking the Dry Fruits. 
    • It is good to use Glass, Ceramic/Porcelain containers with a tight lid for the purpose.  Plastic airtight containers also serve the purpose.
    • It is good not to store the soaked fruits in Metal containers which may tend to react with alcohol.
    • Alcohol brings the best of flavours in the cake, especially when soaked for months prior to baking the Christmas Cake.
    • So this method is the most commonly used and the traditional way.
    • Take all the cleaned dry fruits in a large bowl.  Pour enough Wine/Brandy/Rum/Vodka over the dry fruits.
    • The liquor should be sufficient enough and should cover all the dry fruits.
    • If you are using a flat container, the job gets much easier.  Tall containers use up more alcohol than required to soak the amount of dry fruits.
    • Can soak finely chopped Nuts along with the dry fruits, but it tends to lose the crunchiness.
    • It would be a good idea not to soak the Nuts.  
    • Roast the Nuts and dust it up with the Flour used for baking the cake, just before adding it into the Cake Batter.
    • Add some Orange/Lemon zest along with Dry Fruits, grate the Orange/Lemon Zest just before adding it along with the dry fruits.
    • Can also add finely powdered spices to the soaked fruits.
    • Soak the dry fruits at least a month ahead to get a good flavour. It gets better and flavour filled with time.
    • The more the soaking time better the flavour.
    • I store the soaked dry fruits in the refrigerator and stir the contents every other day so that the fruits are evenly soaked in liquor.

     

    SOAKING IN FRESH ORANGE JUICE :

      Orange Juice: 11/2 - 2 Cups
         *Freshly squeezed Orange Juice works best.


      METHOD :

      • Soaking in Orange is for the quick soak method(Overnight).
      • Follow the method as for soaking in Alcohol
      • Instead of Liquor use Orange Juice.
      • Transfer it to airtight glass bottles and store it in the refrigerator for overnight or at least for 10-12 Hours.
      • Soaking for a long time can make the mixture slightly bitter.
      • Can drizzle few teaspoons of Sugar/Brown Sugar while soaking the dry fruits in Orange Juice.
      • Can also add finely powdered Spices to the above.

       

      SOAKING IN TEA :

      Tea - 1/2 - 3/4 Tspn
      Water - 11/2 - 2Cups
      Sugar/Brown Sugar - few Teaspoons
      *Good Quality Tea brings out the best of the flavours.

      NOTES :

      • Boil the Tea Leaves along with Water and few teaspoons of Sugar/Brown Sugar.
      • Strain and allow it to cool.
      • Pour the Tea Decoction to the Dry Fruits.

      NO SOAKING/INSTANT SOAKING METHOD :

      • If you do not have the time or do not prefer to soak the dry fruits, then
      • Cut the Dry fruits, dust the fruits with the flour used for baking the cake and add it to the batter.
      • This way you can avoid the fruits getting sunk to the bottom while baking the Christmas Fruit Cake.
      • Alternatively, you can soak the Dry Fruits in Alcohol/Orange Juice/Tea Decoction for a brief period of time - just for 10-15 minutes just before baking.
      • I would suggest not to soak the Nuts, as they tend to lose the crunch.

      NOTES :

      • Soaked dry fruits can be used in Christmas Fruit Cake, Kerala Plum Cake, Classic Pound Christmas Cake or in a Traditional Christmas Pudding.
      • Can also use it in Light Fruit Cakes.
      • Christmas cake prepared with soaked Fruits yield a moist flavour rich Cake.
      • Soaking allows the fruits to absorb more liquor keeping them moist.
      • Soaking the dry fruits helps to soften and preserve the fruits, soaking removes the sugar that has crystallized on the surface of the fruits.
      • Avoid soaking the fruits in metal containers. 
      • Cover the bowl tightly and leave it aside, allowing at least two or three days, up to a weeks/months for the fruit to absorb the wine/liquor. 
      • Add more Wine/Liquor if needed.
      • Choose light coloured wines for Light Fruit Cakes and dark coloured wines for Dark Fruit Cakes. 
      • The heat will destroy most of the alcohol while baking the cake, but the flavours will remain in the fruits.
      • A rich and good Fruit Cake would have ample of  Dry Fruits & Nuts( at least half the weight of the cake should be Dry Fruits & Nuts).
      • Adjust the amount of Dry Fruit and Nuts according to the number of cakes you need to Bake.
      • The quantity of Dry Fruit and Nuts given here serves best for a Cake baked with 2 Cups of Flour which yields 2 medium sized Cakes.
      • Use Dark coloured fruits like Dark Raisins, Dates, Prunes, Dried Cranberries, Glazed Cherries, Figs, Tutty Fruity, Candied Orange Peels etc., for Rich Christmas Fruit Cake and be lavish with the Nuts.
      • Use light coloured fruits like Golden Raisins, dried Peaches/Apricots/Figs, Tutty Fruity (Red & Green), Glazed Cherries, Candied Orange Peel etc., for Light Fruit Cake. Adding Nuts to the Light Fruit is optional, but I usually use Nuts in my Light Fruit Cake Recipe.
      • Use a hearty amount of Lemon/Orange Zest for a refreshing Citrusy Note in the Christmas Cake.
