Sadhya: A Traditional Kerala Feast for Festivals and Special Occasions

Discover the culinary delight of Sadhya, a must-have experience during festive celebrations like Onam/Vishu or memorable events like weddings and birthdays. Don't limit yourself to festivals or occasions, as Sadhya is a feast worth indulging in any time. Treat your senses and taste buds to an elaborate spread of authentic Kerala cuisine.

Sadhya showcases the art and science of cooking, serving, and eating with meticulous attention to detail. Each component of Sadhya reflects the region's unique flavours and traditions, resulting in a wholesome and balanced meal that satisfies both nutrition and taste.

From the choice of ingredients to the cooking techniques and presentation, Sadhya exudes authenticity. Mastering the art of serving Sadhya on a Banana Leaf is essential for every Malayalee, as it adds a skillful touch to the dining experience. Understanding the placement and portioning of each dish on the leaf is crucial.

Serving a meal on a Banana Leaf is deeply rooted in South Indian culture and offers hidden health benefits. It is a traditional practice where etiquette plays a significant role, from the placement of the leaf in front of the diner to the arrangement of side dishes. The tapering part of the Banana Leaf should be positioned on the left-hand side for convenience.

A Sadhya meal encompasses a wide array of traditional delicacies, ranging from a pinch of salt to delectable desserts. The top portion of the Banana Leaf is reserved for Pappadam, Pazham, snacks, and an extensive selection of side dishes. The lower portion is dedicated to serving Rice, Ozhichu Curries, and the grand finale of dessert (Payasam/Pradhaman).

To begin the feast, serve a Banana and Pappadam at the left end of the Banana Leaf, followed by delightful snacks like Banana Chips and Sarkkara Upperi. Gradually introduce the Sadhya Vibhavangal (traditional items) one by one, starting from the left. Pickles and Condiments are served in small portions, followed by Pachadi/Kichadi/Inji Thayir, which are slightly larger. Next in line are Thoran, Avial, Olan, Kalan, Erissery, Koottukari/Koottu, Ishtu, Mathuracurry, Theeyal, and more, served in increasing quantities.

Once the side dishes are served, present the Rice and accompany it with a series of Ozhichu curries for each course of the meal. The first course features Parippu Curry with a drizzle of Ghee, followed by Sambar and Pulissery/Moru Koottan/Moru Kachiyathu. Progress to Rasam, and conclude the final Rice course with Curd/Yoghurt/Buttermilk (Pacha Moru). The list of dishes can be extended and tailored to suit your preferences and regional variations.

After savouring the Rice, it's time for the crowning glory of Sadhya—dessert! Indulge in the delightful Payasam/Pradhaman, optionally combining it with a Pappadam and a Pazham (Banana). Enjoy this sweet treat with elegance, relishing every spoonful directly from the Banana Leaf or in your preferred manner.

Immerse yourself in the rich flavours and cultural significance of Sadhya, a cherished tradition that encapsulates the essence of Kerala's cuisine.

These Nendhra Bananas undergo a special cooking process, either steamed or traditionally simmered in a syrup made of Sugar or Jaggery, infused with the aromatic flavours of Cardamom, Clove, or Dry Ginger Powder. The result is a tender, sweet delicacy that can be enjoyed as a dessert on its own or combined with the heavenly Payasam/Pradhaman, creating a medley of flavours that will leave you longing for more.
